Fall is in full swing and suddenly every weekend is jam-packed with parties and book clubs and football games. Whatever's on your busy schedule, you know you're asking yourself the same thing I am. What am I going to bring? As someone who's not exactly a gourmet chef, I love a good charcuterie. It's easy, it's tasty and if you do it right, everyone's impressed. And Dave's Fresh Marketplace has plenty of meats, cheeses, crackers and fruit to choose from, so you only have to make one stop.
If you really want to elevate your charcuterie, you can get fancy with their Pumpkin Shaped Baked Brie. This adorably festive recipe will have your friends and family awestruck at your culinary talents. The fact that it's as easy as it is delicious can be our little secret.
Servings: Approx. 12 Prep Time: 10 minutes Cook Time: 30 minutes
Ingredients:
- 1 sheet puff pastry, thawed
- 8 ounces President Brie Cheese
- 1/3 cup apple butter
- 1 egg white, beaten
- Honeycomb
- Raincoast Crisps, Rosemary Raisin Pecan
- Cheese twists
- Apple, red, sliced
- Apricots, dried
- Fresh sage leaves
- Fresh rosemary leaves
Method of Preparation:
Preheat oven to 375° F.
Lay out the puff pastry sheet on a baking sheet lined with parchment paper. Place the apple butter in the center of the pastry.
Place brie on top of the apple butter. Cut the corners of the dough off to make a circle.
Wrap the puff pastry around the brie cheese and pinch the edges to seal. Remove brie from baking sheet and set aside.
Cut 6 pieces of baker's twine and arrange them on the sheet tray evenly apart. Place the brie in the middle of the twine, with seam side up. Tie the twine pieces tightly and cut off excess.
Flip over the brie so the seam side is now on the baking sheet. Brush the top and sides with the beaten egg white. Bake for 30 minutes or until golden brown.
Cool the brie for about 10 minutes before carefully removing the twine. Decorate the top of your "pumpkin" brie with a piece of a cheese twist for the stem and two fresh sage leaves for the pumpkin's leaves.
